Hmmm. Let's figure out how to use some of these wonderful things we get each week! Mark found a recipe for Zucchini Patties w/Pesto
Plenty of Basil - And we usually have the garlic and pine nuts on hand - so Mark made the pesto.
And we used the zucchini and yellow squash we got from our local marketbasket pickup on Saturday. The pesto is actually mixed right into the patties. Lots of flavor. Definitely a winner. I'm definitely enjoying the FLAVOR of fresh, local produce. It really does make a difference.
This recipe was something we've never tried before. And I so appreciate Mark's willingness to explore these healthy food options. Especially when he's the chef!
